Sister Chefs Are 'Bringing it Home'

Zainab and Faatimah Paruk, who are both qualified Chefs, have been making a name for themselves through their catering company, Chilli Chocolate Chefs (CCC) based in Durban. Now they are releasing a 240-page recipe book ‘Bringing it Home’.

Last week I was invited to the launch of this book and it was a lavish affair. There were many tastings to be had and the food on offer, which was all made from recipes in the book, was quite the spectacle. There was something for everyone from sweet to savoury offerings. The sweet treats at the end were certainly worth the wait.

Their lovingly curated recipes are included in this their fourth recipe book which is aimed to inspire you and also delight you. Each recipe has a contemporary twist.

These chefs select only the freshest and tastiest ingredients. So you can be sure that the resulting dishes taste as good as they look. The Chilli Chocolate Chefs make sure each dish is prepared with skill; they also make sure that the dishes are transported safely and the food is delivered perfectly. Their recipe book reflects this.

‘’For us ‘Bringing it Home’ encapsulates the simple joys of creating food that tastes as good as it looks – if not better – with even the most basic skills and in a short amount of time,’’ said Zainab and Faatimah Paruk.

You can expect to find easy-to-follow recipes in ‘Bringing it Home’ which are ideal for any chef or food blogger, from the novices to the experts. Each of the ingredients is easy to find so you will not have a struggle in sourcing them. There are more than 85 recipes in this book and each recipe has a photograph to help you with your plating.

The recipes that feature in this book can also be found on the daily menu at their Musgrave Road kitchen in Durban. There is something for everyone in this book, whether you are looking to cook for yourself or entertain for friends or family.

Review of the Nando's App


This week I was invited by Nando’s to try out their Nando’s App which now also features a kerbside experience. Now you can order your meal on the app and when you get to your nearest Nando’s look out for the kerbside signs and park in their parking bays. One of the friendly Nando’s staff will then come out with your order and you are good to go.

When you place your order on the App you also give them your car details so they can look out for you when you arrive for your next Nando’s fix.

The free app is pretty refreshing and does not take up much space on your device.

You can download it from your nearest App store.

The first step is to sign up and you can enter your cellphone number and a juicy password. Then you should be good to go to order your meal.

Nice options in the menu section include gift cards, your nearest store and more.

All the favourites are there and some great specials. It offers you some great options right down to how many pieces you want your chicken cut into, whether you want it well done and even if you want the skin on.

You can even choose how hot you want your chicken. Tasty options include Tangy Tomato, Lemon & Herb, Mozam Paprika, Mild, Hot and of course Xtra Hot for those that like to live dangerously.

A nice touch is that you can also see the nutritional info for each meal.

If you are a fan of Boujee bowls you will be delighted to see that Nando’s now have some tantalising options for you.

If you are wanting something for Family & Friends try the Full chicken with 2 sharing sides which works out great value. You can choose sides that include spicy rice, salads, Nando’s rolls, Chips, Coleslaw and more.

I like the fact that you can schedule when you want to collect your order so you can organise your lunch or supper early in the day and pick it up on the way home. What a concept!

I also like the fact that you can select which Nando’s store you want to collect at and the App search function works pretty well in picking up your nearest Nando’s.

Once you have ordered you should also get a SMS confirming your order.

Payment options include card or cash which comes in handy.

Another nice touch is that if you want to collect immediately the App will give you an ETA of when your order will be ready.

When I arrived at my nearest Nando’s I didn’t have to wait long at the kerbside parking. A friendly Nando’s staff member wearing PPE, mask and more came out and even sanitized my hands before she gave me my parcel. She even asked me to check that everything was correct in the order which was a nice touch.

So now you have a handy option for weekend meals. You can either use the Kerbside functionality on the Nando’s App or Website or through their call centre.

Simply order, drive to Nando’s and collect…without leaving your car. They bring your order to your car window. No more waiting in long queues.

            1. Download the Nando’s app on the Android or iOS app store (it’s FREE)

            OR

            2. Call 087 997 1955 to place your order for Kerbside collection

            3. Give them your car deets (Car make, colour and registration) so they know                     how to find you when you pull up

            4. Drive to Nando’s and follow their Kerbside signs

            5. Park at the Kerbside parking or as close as possible to Nando’s so they                        know where to find you

            6. They will meet you in the parking lot and bring your food to your car window.

In the spirit of social distancing, you don’t even have to leave the safety of your car. All their employees continue to follow the strictest hygiene and social distancing precautions by wearing masks and regularly sanitising their hands.

If that doesn’t work for you but you’ve been missing them, use the Nando’s Drive-Thru and takeaway services. So get in the car (or mask up and take a walk), put foot and get your PERi-PERi on! If you’d like to stay home, you can continue to order your food for delivery using the Nando’s app or use their partners Mr D, and Uber Eats platforms.

For those of you wondering how good a Nando’s meal is, well let me put it to you this way. Somebody tried to phone me while I was eating my Nando’s and I didn’t bother to answer. So yeah, it’s that good.


The app is certainly worth the download when next you want to order lunch or supper.

10 Questions with Justin Bonello


This week we interview Justin ahead of his appearance at Taste of Durban.

1. Tell us about Ultimate Braai Master, how did that develop?

Well, it was quite strange that no one had done this show before. When you think about it, we call it braai in all 11 official languages and we keep bringing international formats into South Africa and try to turn an international format into something home-grown, so in many respects the Ultimate Braai Master was a no-brainer. It’s something that all South Africans relate to, something that all South Africans do over the weekend (or any opportunity that they have), and with the advent of lots of cooking shows and chefs and cooks becoming the new rock stars of television, it just made perfect sense for us to put together a show that was based around what South Africans love to do. In fact, you can think of it as a show created by South Africans, starring South Africans, filmed by South Africans that taps into the South African psyche.

2. Was there a point when you had started shooting the first series when you all stopped and said 'Guys I think we are on to something here?'

My business partner, Peter Gird, and I were both very nervous when we held the first Ultimate Braai Master auditions in Cape Town, and while he was driving through to the audition locations, he saw a bakkie filled to the brim with braai grids, accessories and paraphernalia that could be used for a braai and at that point, at 5AM on the first day of shooting the season 1 auditions, we knew that we were onto something special.

3. Now you are all over on TV the other day I saw you on 'Cooked Out of the frying pan' how did that develop?

When I first started off doing television shows I was just a cook. When I went away with mates, I was always the one who cooked, and by the time I had filmed three seasons of Cooked with my mates and I had travelled the length and breadth of Southern Africa having a good time showcasing what a beautiful country we have, I had begun to feel like I was cheating the viewing public: here I was on TV as a cook, showing people how to cook and how to live a certain experience and a lifestyle, and I had no formal or professional training. Out of the Frying Pan was a great way to work with some of South Africa’s best cooks and chefs and up my cooking game and bring the viewer on that journey.

4. Now 'Ultimate Braai Master' you guys managed to secure a deal with the Travel Channel how did that come about?

Although South Africa is our primary market, all the content that my production company, Cooked in Africa Films produces always has an international appeal. When we first hooked up with the Food Network we suggested to them that Braai Master was a perfect fit for them because the series showcasing food in South Africa. The funny thing is that the Travel Channel came to us and said ‘hang on, it’s a better fit for the Travel Channel because it’s got that outdoor, travelling, road trip vibe with food in it’  - I guess we were just really lucky - we had a show with international production value, global appeal and our timing was just perfect. We are proud to announce that the Travel Channel will be airing season four as well!

5. So the new series of 'Ultimate Braai Master' what can we expect?

Without giving away any spoilers, in the first three seasons we had confirmed that we could cook anything that we wanted on the open fire and we really did do that – whether it was brains, testicles, tripe, trotters and whole animals in really trying circumstances, but for season four we looked at how do we still do that and add in a pinch of drama. That’s all I’m prepared to give away because you have to watch the show to see how we have put in the drama and some animosity between the contestants, because in fact, one of our biggest problems in the past was that contestants kept becoming friends on the road. In season four we’re out to make frenemies.

6. Tell us about your background, how did you develop this love for food and cooking?

I was very lucky to have parents who took my sister and I out to the great outdoors and in fact my ability to cook came out of a necessity to know what to do with nature’s bounty, so whether it was diving perlemoen, harvesting mussels or catching fish, my first experiences of food was borne out of the necessity to know how to prepare the items that I caught and from there it just evolved. We all have a guy or girl in our group of friends who generally becomes responsible to prepare our food – I was that guy and had to learn or face the wrath of my friends.

7. What advice do you have for youngsters who are wanting to become Chefs?

Well, I’m just a cook, but what a lot of people don’t know is that TV has made chefs quite glamorous, and as I previously stated, nowadays chefs have become rock stars. I think what I’d like to say to people wanting to become chefs is that you should first check out the hours. Often it’s very unrewarding work in the belly of a hotel or establishment, cooking great food for people that you never see and while everyone is on holiday, you’re not – so before you decide that this is what you want to do, make sure that it really is, otherwise you’re going to end up in the depths of some kitchen without recognition for what you do.

8. So you are coming to Taste of Durban what are you going to be doing at it?

Yes, I’ll be making hamburgers and showing South Africans a couple of tips and tricks when it comes to making one our favourite one-handed delivery vehicles for flavour. So if you’re around, do pop in and check it out!

9. What makes a good burger?

Firstly, you have to have good beef. In life you can never prepare a great meal without great ingredients so quality is key. Personally, I don’t like it too finely minced – I mull my patties by hand – I definitely don’t like the store bought stuff.

10. Talk a little bit about the presentation of food, it's one thing to make a great meal but how should you serve it?

You’re talking to the wrong guy here. Often I say, how do you make a potjie look sexy? When it comes to fine dining, you expect your food to look amazing, but when it’s just your mates what actually counts is flavour. Often people do eat with their eyes, but the real taste explosion comes when you pop it in your mouth.

Your Event Guide For The Oyster Box - October and November


SOMETHING FOR EVERYONE ON THE MENU AT THE OYSTER BOX



There’s something for everyone on the Oyster Box’s entertainment menu in October and November.  From foodie and theatre events, to comedy and commentary, and fundraising occasions to show you care.

Highlights for the period include Curry & Comedy with Aaron McIlroy and Breakfast with Tony Leon in October and in November, a Food & Wine Dinner with Guest Chef Christo Pretorius and Dinner Theatre with local songbird Cat Simoni, doing a show dedicated to the great Ella Fitzgerald.   

Throughout the month of October the daily High Tea at The Oyster Box, will be pink-themed in recognition of Breast Cancer Awareness Month.  A total of R10 will be donated to CANSA for each person attending High Tea in October.  The tea is R 195 per person. 

Also this month, Pig ‘n Whistle Productions bring the musical review Spice Up Your Life, to The Oyster Box.  Director Meryl Kurtz promises “an afternoon of music and entertainment, with a bit of everything from rock to  country and western.” A percentage of the ticket price goes to the Pink Phoenix Foundation for childhood cancer.  Tickets for the show (5 October) and a three-course lunch are R300 per person.

One of the highlights of the Oyster Box’s social calendar is Skabenga’s Birthday Bash on 7 October. Join our resident celebrity cat for a morning of birthday treats and activities on 7 October.  Kids, parents, grandparents are all invited to share in the feline festivities. Spread the love and bring along a donation towards Feral Cat Rescue.  Cost is R200 per adult and R150 per child.
                                                                       
An evening for adults with one of South Africa’s most popular and hilarious entertainers is not too be missed! Aaron McIlroy brings his comedic skill to the next Curry & Comedy event on 8 October. Experience him in action and you’ll see why. The evening includes a three course meal and the show.  Tickets are R 350 per person.

Articulate and outspoken, author, former DA leader and ambassador, Tony Leon remains one of South Africa’s most prolific political commentators. Join us for breakfast on 9 October at R290 per person (plated breakfast) to find out more about the man behind the persona.

Executive Chef at sister hotel, the Twelve Apostles Hotel & Spa in Cape Town, Christo Pretorius is our guest chef in November.  For the food and wine paired evening he will showcase Cape Malay spices and flavours using KZN’s local ingredients.  The five-course menu in the Grill Room is R550 per person and takes place on Wednesday 5 November at 19:00.

Leading up to the start of the festive season, on 20 November, The Oyster Box welcomes back Cat Simoni, with Cat Sings Ella - The Ella Fitzgerald Story.  Already a firm favourite with Oyster Box patrons, Cat will take you on a musical journey, revealing the woman behind ‘the iconic Voice’.  Often referred to as the "First Lady of Song" and the "Queen of Jazz", Ella was a notable interpreter of the Great American Songbook. The cost of R350 per person includes dinner and the show.

On Tuesday 25 November, The Oyster Box hosts fabulous South African chef and author of a number of popular cook-books including Abundance, Delectable and Sumptuous, Marlene van der Westhuizen for a delicious lunch and the launch of her new book, Secrets of A French Kitchen.  Van der Westhuizen invites you to steal a glimpse into the inner workings of her fiftieth cooking class in the French village of Charroux. Along with 80 new recipes, follow Marlene and her class as they lift the veil on the understated glamour of French country cooking, eating and living.
